How do you work out a 50% gp on food
The way I work out my gp
the sum is food cost / .28 x 1.150(vat) this gives you a 72% gp
or just x food cost buy 4 as this is near 72% these both give you selling prices
to work out over all gp you need to start adding sales figure, purchase figures - stock take
I always over allow on dishes as this accounts for wastage, aim for 75% gp and 25% food cost and you can't go wrong and watch the bonus come in, with way ingredients are going up your dishes will seem quite expensive,
