Such a journal is something you must develop over a period of time. Write some on this or a related topic each day. Your collection of writings will constitute that journal. It will help immensely if you actually have teaching responsibility. If you don't, you can volunteer as a classroom assistant or tutor, or you can answer questions on a site like this one.
